Avoid overfilling, this will create a peaked top on your cupcake (think volcano top!) -Bake at 300 for 20-23 minutes! Low and slow also helps to prevent a volcano top Vanilla Cream Filling: -3/4 cup Milk -1/4 cup Flour -1/2 cup Butter 1/3 cup Shortening 1 tbsp Clear Vanilla Extract -1 cup Powdered Sugar *Tips -Continuously Whisk your Flour and Milk on medium heat, monitor to prevent burning/browning It is really helpful to use a cupcake corer when filling your cupcakes! Gadget can be found here: https://amzn.to/3tcR0tG -Core cupcake from bottom to avoid leaving lines on the top Chocolate Icing/Glaze -2 tbsp Cocoa Powder -1/2 cup Powdered Sugar -4 tbsp Hot Water -1/2 cup Semi-sweet Chocolate Chips -1/8 tsp Salt -1/2 tbsp Corn Syrup -1/2 tbsp Clear Vanilla Extract *Tips -Work quickly when frosting cupcakes! This icing sets much quicker than chocolate ganache. If it hardens no worries, microwave for 5 seconds and stir. If it is still too thick, add 1/4 tsp of crisco and microwave for an additional 5 seconds, then stir -Use any store bought decorator icing for piping the squiggle pattern. I like using the Betty Crocker since it can be used straight out of the tube, no need to adjust the consistency.
