Come with me on a journey as I grill some Thick Cut Pork Chops hot and fast on the @Char-Griller Akorn! I started with two thick cut two bone pork chops, added avocado oil as a binder and seasoned them with the items listed below. •Fiesta Brands Garlic Pepper Seasoning •Herbs de Provence I then let the chops rest for fifteen minutes. In the meantime, I lit a chimney of charcoal using @BBCharcoal Oak Lump Charcoal and once it was fully burning, I dropped it into the Akorn and adjusted th dampers for the grill to come up to temp and maintain 500 degrees. Right before the cook, I pit in some Post Oak Wood Chunks for additional flavor. For temperature regulation, I used the @MEATER Plus on this cook. I placed the chops on the grill and let them cook for about a minute and fifteen seconds. I got some really great color and flipped the chops, being sure to use a different portion of the grill to get some great hatch marks. So I cooked for a total of about eight minutes until the Meater Plus alerted me to pull the chops to account for the carryover that would take them to 145 degrees. These chops had a great flavor due to the simple SPG and Herbs de Provence which provided a nice textured crust. They were full of moisture and tender as all outdoors. Give these a try and understand that high heat cooking isn't that scary. Just monitor your temps!
