Add rice and "toast" it with the onions, another 2 minutes. Add water, season to taste with salt and pepper and bring to a boil. Cover and place saucepan in oven for 18 minutes. Remove rice from oven with potholders. Fluff with fork and divide among plates. Serve hot.
