!!!probiotics note!!! my friend just got the ones in the video and they now say "contain dairy" :( where mine from last year do not... trying to figure out if either of us have a misprint or if they reformulated, but for now if that matters to you plz do not get that particular probiotic! recipe!!! 1. soak 1c cashews overnight 2. blend til smooth with 1.5c water – it should be like a thick cashew milk – add up to 1/2c more water if it seems too thick 3. mix in 1tsp salt, 1 tbsp olive oil, 1tsp apple cider vinegar, and the inside of 1 probiotic capsule containing lactic acid bacillus 4. once mixed, pour into tupperware and top with one more sprinkle of salt to prevent mold 5. seal in tupperware and let culture for 24 hours. it. should smell distinctly cheesy, but not be too yeasty or bubbly. if it is, try again and boil your cashews after soaking them. 6. whisk in a thumb of miso, 1/8c nutritional yeast, 3 tbsp tapioca flour, 1/2tbsp carrageenan powder, 1/4tsp xanthan gum, and a final sprinkle of salt 7. whisk on medium heat repeatedly until the cheese gets thick and glossy, like the inside of a hot mozzarella stick 8. turn the heat off and pick up small spoonfuls of cheese and drop them in a bowl of salty ice water.
