Soy Lecithin is a highly processed product that is created by taking soy beans, using hexane to separate the oil from the lecithin then bleaching it with hydrogen peroxide. Soy lecithin is lacking antioxidants which protects it from free radical oxidation. Peroxidized fats are mutagnic (damage DNA), carcinogenic (cause cancer), thrombogenic (cause abnormal blood clots), atherogenic (cause atherosclerosis), and suppress the immune system.
