Rosemary Syrup Rosemary is a wonderfully aromatic shrub with an evergreen like appearance. It has a slightly minty sage-like aroma with hints of pepper. It has a slight woodsy and bitter flavour. Rosemary is often used in savoury dishes and stews but is an excellent flavour in cocktails as well. By creating a rosemary syrup, you can easily incorporate the fresh herbal flavours and aromas of rosemary into any beverage you make. Rosemary syrup is an excellent addition to vodka and gin drinks. Pairing flavour options include lemon, lime, mint, apple, cucumber and various fruit flavours. INGREDIENTS Water (1 cup) Sugar (1 cup) Fresh Rosemary (8 Small Sprigs 10g) DIRECTIONS Using a saucepan, add water and bring heat up to medium-high. Heat up the water to a boil. Add the fresh rosemary. Add the sugar. Stir until the sugar has dissolved. Remove from heat. Let rosemary steep for 10 minutes*. Remove rosemary from the liquid. Let the liquid chill at room temperature. Bottle, seal and refrigerate. Keep refrigerated. Keeps for 7 days. *If you wish to have a more intense rosemary flavour, steep for a longer period of time and tasting often until you have reached the desired flavour potency.
