Tlaxcala, the beautiful Mexican city you've probably never heard of but will absolutely love. Near Puebla, this small city is incredibly popular with Mexican travelers but remains virtually unknown to English-speaking tourists. We explore everything Tlaxcala has to offer in one perfect day. We start with traditional tlacoyos - boat-shaped corn tortillas filled with beans and topped with salsa, cheese and onions - found at a local tortilleria recommended by street vendors. The name Tlaxcala means "place of the corn tortilla," so you know the corn-based dishes here are exceptional. We climb the steep stairs to the hilltop monument of Xicohténcatl for stunning panoramic views of the city and surrounding mountains. The effort is absolutely worth it for these breathtaking vistas. Tlaxcala's history is fascinating as one of four powerful Indigenous kingdoms that fought against the Aztecs in the Flower Wars. When the Spanish arrived in 1519, the Tlaxcaltecas initially resisted but later became Spanish allies to defeat their larger enemy, the Aztecs. This alliance granted them special rights during colonization, which you can still see reflected in the city's beautiful architecture today. We explore the stunning Cathedral built between 1570-1650, funded by the Tlaxcaltecas themselves, featuring a gilded altar and artwork with Indigenous influences. Don't miss looking up at the ceiling, which shows fascinating Spanish Islamic architectural influence. Food highlights include tacos de canasta - unique steamed tacos served from baskets that are perfect for breakfast or snacks. We also try fresh tuna fruit from cactus plants at the local market. The culinary adventure culminates with mixiotes de cordero at Fonda La Esperanza in the market - traditional lamb stew steamed in agave plant leaves that's typically served at festivals and special occasions. This dish showcases why the market is always the best place to find authentic local cuisine. We visit the Plaza del Toro Aguilar, the local bullfighting ring named after a famous matador, and learn how bullfighting arrived in Mexico through Spanish colonization in the 1500s. With its spring-like weather in August, friendly locals, beautiful colonial architecture, incredible traditional food, and significantly lower costs compared to nearby Puebla, Tlaxcala proves why it's such a beloved destination for Mexican travelers.
