You can also use a stick or dowel with a notch, and a leather strip at an angle to the blade to run against to do the same thing, if you run a different attack angle on a fixed blade you will understand quickly that the entry point and attack angle matters and it differs with different tempers of leather, veg is firm and chrome or alum or brain tanned is soft and spongy, stretching it as it goes thru the blade is the key to a nice beveled flesh side though the method and blade choices will differ with the skin side strength.
