Join my Facebook page!! / yesterkitchen Inquiries about Sponsoring, Product Testing, Affiliates and Partnering please contact me at YesterKitchen@gmail.com Here’s your recipe! 4 cups day-old French bread or hard rolls, cubed 1 1/2 cups cucumber, peeled and diced 1 medium green pepper, seeded and diced chicken broth, approx. 2 cups 2 cloves garlic 2 tsp salt 1/2 cup olive oil 1/4 cup red wine vinegar 2 lbs. ripe tomatoes, seeded and chopped Place bread cubes in shallow dish and cover with chicekn broth 1 inch deep. Let bread soak turning once. Combine cucumber, green pepper, garlic, sale, oil and vinegar in blender or food processor. Blend smooth. Add half the bread and blend again until smooth. Pour into a bowl. Blend remaining bread and tomatoes and add to bowl. Mix well and add more salt or vinegar if desired. Chill well and serve with desired accompaniments: chopped cucumber, chopped tomatoes, sliced green onions, sliced Spanish olives, crumbled bacon, chopped hard boiled eggs and/or toasted slivered almonds Thank you so much for joining me!!!!
