As someone who is into locksport (recreational lockpicking [of own locks]), I have a case full of lockpicks, padlocks and handcuffs. I have noticed over time that not all handcuff keys are equal and some brands work in more models while some don't work. It can be very confusing and frustrating. This video demonstrates how different brands of handcuffs' keys are not always universal. This can cause problems when one person needs to unlock the handcuffs of someone else who uses a different brand. This is more of a problem in America where different people like to use different brands. Also if someone was held hostage and an officer attempts to free them from handcuffs, if non-standard brands were used, there is less of a guarantee that their key would work.
