Mix well, then coat the lamb chops evenly. Cover and marinate for at least 30 minutes (overnight for best flavour). Step 2: Cook the lamb chops Heat a pan on medium heat with a little oil or butter. Add the lamb chops and cook for 4–5 minutes per side until golden. Lower the heat, cover and cook for another 5–7 minutes until tender. Rest the lamb for a few minutes before serving. Step 3: Prepare the mashed potatoes Boil the potatoes in salted water until fork-tender. Drain well and mash while hot. Add butter,, salt and pepper. Mash until smooth and creamy. Finish with chopped green onions on top. Step 4: Cook the vegetables Boil or steam the vegetables until just tender. Toss with a little butter or olive oil and season lightly with salt. Step 5: Serve Spoon the mashed potatoes onto the plate. Place the lamb chops on top or beside the mash. Add the vegetables on the side. Pour some gravy over the mash and lamb. Serve hot and enjoy.
