Ingredients: Prawns - 200g Marination- Salt - 1/2 tsp Black Pepper Powder - 1/2 tsp Turmeric Powder - 1 tsp Cooking- Butter - 1.5 tbsp Chopped Garlic- 1 tbsp Chopped Onion - 2 Milk - 1/2 cup White Pepper Powder- 1/2 tsp Cheese - 1/4 cup Dough- Water - 1 cup Clarified Butter - 1 tsp Plain Flour - 1 cup Coating- Egg - 1 Breadcrumbs - 1 cup Method: For the Prawns: Cut the prawns into small pieces and place them in a bowl. Marinate the prawns with black pepper powder, salt, and turmeric. Let them sit for at least 10 minutes to absorb the flavours. Heat some oil in a pan and fry the prawns until they are fully cooked. Remove the prawns from the pan and set them aside. For the Sauce: In the same pan, add butter and chopped garlic. Cook for a minute or two until the garlic becomes fragrant. Add the chopped onion and a pinch of salt, cooking until the onions turn golden brown. Pour in the milk and mix well, letting the sauce come together. Add the cooked prawns back into the pan and mix everything thoroughly. Remove the pan from the heat and set aside. For the Dough: In a separate pan, bring water to a boil. Once boiling, add the clarified butter and stir well. Gradually add the plain flour while stirring with a spatula. Continue mixing until the dough thickens and begins to pull away from the sides of the pan. Once the dough becomes soft and pliable, remove it from the heat. Knead the dough for a few minutes to ensure there are no hard spots. Divide the dough into small sections and roll each section into a ball. Use a glass or rolling pin to flatten each ball into a small circular shape. Assembling the rissois: Place a small amount of the prawn filling in the canter of each dough circle. Carefully fold the edges of the dough over the filling, sealing it tightly to form a rissois. Coating and Frying: Brush each filled rissois with an egg wash (beaten egg). Coat the rissois in breadcrumbs, ensuring they are evenly covered. Heat oil in a deep fryer or pan.
