An authentic Afghan comfort food. Consisting of cooked pearl barley topped of with ground beef and yogurt. Garnished with chopped cilantro and dried mint. Ingredients: 1/2 cup of canola oil 2 medium onions 3 cups of pearl barley 1 tsp fresh grated ginger 4 cloves of garlic Spices: Salt and Pepper 1 tbsp of ground coriander 1/2 tsp of garam masala 1/2 tsp of ground turmeric 8 cups of water Toppings: Cooked ground beef Yogurt Cilantro Steps: In a pressure cooker, on medium heat, add oil Add onions and sauté for 1-2 min Next add fresh ginger and garlic cloves After 2-3 min add the spices Stir for 2-3 min Next add the barley, give it a stir Add 8 cups of water, and place the lid on the pressure cooker Turn heat to high, let it cook for 5-10 min Next turn heat to medium, let it cook for another 15-20 min After turn heat to low, and let it cook for another 15-20 min Remove the lid once the heat has been released Plate the barley, and add top it with ground beef and yogurt Garnish with cilantro and enjoy!
