Making a custom comal

Many of you know that I have been on a culinary journey for quite sometime now. As an artist it’s the touching of the materials for me! There is a fire that burns within my soul to create to explore and to do so without limits, boundaries or excuses. A few months back I began to test both corn and flour tortilla recipes. I purchased every brand of every corn and flour there was to test them side by side. I quickly learned that a commercial grade tortillas press was a must and so my daughter bought one for me. What a game changer! I narrowed the corn meal and flour types and recipes down quickly and found some incredible favorites from Oaxaca Mexico from a company called Masienda! Chef grade corn flour that has an aromatic note that literally transports you and you will swear that you are next to a tropical fire horno and you are right there cooking blandas (corn tortillas) in Oaxaca! Look I had great success with my tortillas but if you know me I am a perfectionist and I simply cannot accept no for an answer. I quickly leaned the importance of a proper comal that distributes the heat evenly during the cooking process. I bought all kinds most were failures only the thin square griddle worked to any decent degree but it cooks the tortillas in evenly and that is simply not acceptable at this level of the game. Proper comals are a rarity and vary from kitchen to kitchen. During a recent conversation with my mom who is one of the purchasing agents for La Eapiga de Oro a Clovis tortilleria factory. I learned that the thickness of the comal was key for heat distribution. So as I scoured the web for thick comals it always lead me to cast iron. No no no no no I don’t want cast iron I want solid 1/2” steel!!!!! End search. So now I am here in Clovis New Mexico working on a super cool house that is crazy massive! After we apply a coat of material we have to let that material completely dry. So that gives me some time to watch a lot of tik tok cooks and everyone has a comal but me. That bothers me - So as I wake up this morning and we load up the truck to head out to the project i turn the corner and there is a place called Marks Pipe and Iron...... you see where this is going? Now here in Clovis this is the cattle capital of the southwest so for every truck there is two cowboys two hats and two trailers and two Trump/pence stickers and livestock. And they all need pipe and iron to keep it together literally. Out of nowhere my ancestors were yelling alli mijo alli! So I literally whooped a uie! Slang for u-turn. Parked, jumped out and told the owner Mark can you cut me 2 12” circles out of 1/2” steel! His reply was classic “ yes sir, we surely can”. He said “ just give me a few minutes and I’ll get er done” I said “I’ll just be over here trying to not to look like an obvious Biden supporter because I really need these! I was pretty nervous trying to film this ordeal The whole time I was wondering if my eyes would burn looking at the camera image of the cutting torch!?!? Hey safety first! Now all this happened within 2 min of my driveway! Once they were cut we were off to apply another coat and as that dried well this film happened! The moral of the story is if your dream does not exist create it! Just be sure to give it a mirror finish 😉
