Soy sauce, to taste 1-2 t. Chili Garlic sauce, to taste 4 cups shredded chicken Large bag of chicken wontons, calculate about 7 wontons per serving 1-2 scallions, green and white parts, thinly sliced For Sweet and Spicy Soup: 1-2 T agave nectar, or to taste For Hot and Sour Soup: 1-2 T rice vinegar, or to taste ✨Directions Pour chicken stock into a large soup pot and slowly bring to a boil on medium to medium-high heat. Meanwhile, dice the onion and carrots and add to warming broth. Mince the garlic, grate the ginger (on a microplane) and scrape into broth. Stir in the soy sauce and chili garlic sauce to taste. Once broth is boiling, lower the heat to a simmer. Clean and slice the mushroom and Bok Choy and toss into the soup. Add shredded chicken and cook for another 5 minutes before bringing it to a boil. Once in a full rolling boil, carefully add wontons and cook for another 5 minutes until the wontons are cooked through - but no longer. Sprinkle the top of each bowl of soup with fresh scallions and serve immediately. Enjoy! ✨ Notes For a savory vegetable soup, add mushrooms and bok choy and bring it to a full rolling boil to complete the cooking time. Soup can be refrigerated and/or frozen (veg or chicken) for easy future meal prep. Wontons are best added to boiling soup 5 minutes before serving.
