Enjoy the rich, aromatic Chicken Rasheeda, cooked with creamy spices and deep traditional flavour — a comforting chicken delight for every occasion. Plus, master the art of smoky, juicy Mutton Seekh Kabab, perfect for BBQ nights, dawats, or weekend lunches. ✨ Recipe Card: CHICKEN RASHEEDA Ingredients Chicken 1 kg 16 pcs Lemon juice ¼ cup Ginger garlic paste 2 tbsp Cardamom powder ½ tsp Turmeric ½ tsp Chili powder 2 tsp Cinnamon powder ¼ tsp Green chilies 20 Mace ¼ tsp Nutmeg ¼ tsp Chili powder 1 ½ tsp Coriander powder 2 tsp Brown onion 1 cup Coriander leaves handful Mint leaves 3 tbsp chopped Saffron ¼ tsp soaked in ½ cup milk METHOD Put all the ingredients given to marinate the chicken and leave it for 2 hours. Mix chicken with all the given ingredients, blended dry fruits, mix well, give dum of coal, leave it for 1 hour. In another pan, heat ½ cup ghee, ¼ cup oil, add the marinated chicken in this, mix well and leave it covered to cook, when oil comes on top, add 1 cup water, cover and cook till chicken tender, serve with paratha or nan. Other Dry Fruits Cashew nuts 10 Almonds 10 Coconut 2 tbsp Yogurt 1 cup Chicken stock cube ½ Blend together dry fruit with 1 cup yogurt and add to the marinated chicken MUTTON SEEKH Ingredients Onion 1 grated and squeezed out all the water from onion Mince 750 gm Salt 1 tsp Coriander powder 1 tbsp Cumin powder 1 tsp Black pepper 1 tsp Crushed red pepper 1 tsp Chili powder 1 ½ tsp Allspice 1 ½ tsp Baking soda ½ tsp Ginger garlic 2 tbsp Green chilies finely chopped 6 Lemon juice 2 tbsp Bread slice 1 chopperise Gram flour roasted 2 tbsp METHOD Mix all together, chopperise well till all well mixed. In a bowl take 3 tbsp ghee, 1 tsp chili powder, mix well, add to the mince, mix well, put ¼ cup ghee in a fry pan, make seekh kebab on a skewer and put on the fry pan, slightly fry for at least 5 mins on each side, give Dum of coal, serve with raita and kachumber.
