Firstly, apologies for the scar on the hand— I burned myself on a heating element in the oven and forgot to cover it up with a Bandaid until the last sequence! On-brand injury though. I made a variation of this almost exactly a year back, but this is a far more refined version of it, with a much better chocolate pastry tartshell, and a lush, super smooth crémeux on top. I discovered the divine smoothness of chocolate crémeux in one of my previous videos, and I HAD to use that luscious chocolate goodness in a tart. Since it's stone fruit season here, a cherry tart seemed perfect. So here it is, consider this a v2.0 of my dark chocolate cherry tart, enhanced exponentially by the utterly smooth lusciousness of a chocolate crémeux. I've used a quicker method here, instead of tempering the yolks by cooking the milk and cream first, I've mixed it all up and slowly bought it to temperature (75°C if you have a thermometer, or till you see the first wisps of steam if you don't) before pouring it over the chocolate to melt it all and blend it smooth.
