A moist, buttery yellow cake recipe using everyday ingredients. Great for any occasion--fill & frost however you'd like. Just try not to eat it straight from the oven! Yellow Cake 2 1/4 cups cake flour 3 1/2 tsp baking powder 1 tsp salt 2/3 cup butter, softened 1 1/4 cups sugar 3 eggs, separated 1 tsp vanilla extract 1 1/4 cups buttermilk Sift together flour, baking powder and salt; set aside. In a large mixing bowl cream butter. Slowly add sugar and beat 3 minutes until light & fluffy. Add in 3 egg yolks one at a time, beating well after each addition. Scrape down sides of bowl often. Add vanilla and blend well. Now add flour mixture alternately with buttermilk in 4 stages, beginning and ending with flour mix. Keep scraping sides of bowl and mix only until combined, about 1 minute. Beat egg whites until stiff peaks form. Fold into batter in 2 stages until no streaks of white remains. Divide batter among 2 greased & floured 8 inch cake pans. Bake in a preheated 350 degree oven for 20 -25 minutes or until toothpick inserted in middle comes out clean. Cool completely before filling and frosting.
