Canning Watermelon Lemonade Concentrate | Preserve Summer in a Jar!

If you’ve ever felt like the person in those old school math problems—“Bri bought 50 watermelons, how many jars can she make?”—that’s me right now! I hauled home 50 watermelons from the Amish produce auction and today’s project is a big one: canning watermelon lemonade concentrate. 🍉🍋 I’m making a triple batch of this bright, refreshing concentrate so I can jar up a little piece of summer and enjoy it all winter long. In this video, I’ll walk you through the entire process: ✨ Cutting up fresh watermelons (and saving the seeds for planting) ✨ Breaking the fruit down with an immersion blender (or potato masher) ✨ Mixing 6 cups watermelon, 4 cups lemon juice, 6 cups sugar per batch ✨ Heating to about 190°F without boiling ✨ Filling quart jars & water bath canning for 15 minutes ✨ Simple seed-saving method to grow your own melons next season This recipe is the perfect balance of sweet and tart. It’s not an everyday drink, but it’s a fun treat with no dyes, no artificial flavors, and no junk—just real ingredients! Watermelon is loaded with lycopene, vitamins A, B6, and C, plus potassium and magnesium, so you’re preserving more than just flavor—you’re preserving nutrition too. By putting in the work now, I’ll have jars of summer sunshine to crack open in the middle of winter. Just add water (or sparkling water!) and you’ve got a refreshing drink straight from the pantry. Watermelon Lemonade Concentrate 6 C deseeded Watermelon 6 C sugar 4 C lemon juice Heat until sugar is dissolved, but do not boil. Ladle into quart jars and waterbath for 15 min. To use, mix 1 part concentrate to 1-2 parts water depending on what taste you like.
