As an irresistible classic ingredient, chocolate is known as a natural antioxidant (choose 70% or more bittersweet chocolate), but the point is that it's a perfect match for bananas. The combination of the slight bitterness of the chocolate and the sweetness of the banana makes for a delicious flavor that's easy on the eyes. Here is the recipe for Banana Chocolate Pound Cake: ☞ Baking mold size: 17x8x6cm ✎ Ingredients butter 100g Caster Sugar 80g 2 medium eggs (about 100g) Rum 3g All purpose Flour 110g Baking powder 2g Salt 1g 70% Chocolate 22g Whipping cream 22g Banana 40g ✎ Method / Instructions 1. Cover the baking mold with a thin layer of softened butter and line with baking paper (a little butter will help the paper to fit better). 2. Sift the flour and baking powder together. 3. Pour the bananas and rum into a bowl and mash them with a fork. 4. Add the whipping cream and chocolate to a microwavable bowl and heat at 500W for 30 seconds, let stand for 2 minutes, then stir together. 5. Add the softened butter and a pinch of salt to the mixing bowl and beat with a handheld electric mixer on medium speed for 2 minutes, until the butter is puffy and pale, scraping the bowl 1-2 times. 6. Add sugar and beat on medium speed for 2 minutes. 7. Add the egg mixture in two batches, beat until the texture is blended, then add the remaining egg mixture (about one and a half minutes each time). 8. Add the mashed banana and mix well. 9. Add flour and baking powder, mix on the lowest speed until no dry powder is visible, do not over mix. Then mix again with folding method. 10. Pour in the rest of the batter and chocolate, and use a knife or toothpick to draw random patterns on the surface. 13 Preheat the oven to 180°C and bake for 50-55 minutes (our oven baked for 53 minutes). 14. After baking, let the cake stay in pan for about 10 minutes before removing from pan, and letting it cool completely on a wire rack. 15. Baked cake can be stored at room temperature for up to 2 days, in the refrigerator for up to 5 days, and frozen for up to 2 weeks.
