It can be difficult to get fresh - or wet - hops to brew a fresh hop beer in Alaska. But at Alaskan Brewing Co., we like to do things the hard way. Normally, beer is brewed using kiln-dried hops in pellet form. Among other things, this allows hops to keep for longer. Fresh, or wet hops, are whole hop cones that have not been kiln-dried or pelletized. In fact, wet hops look exactly the way they were in the fields before they were picked, and retain much of the moisture they had while hanging from the bine. Wet hops are viable for brewing for about 24 hours, so timing, refrigeration, and careful handling is crucial to make a proper fresh hop beer. This year, we partnered with Cornerstone Ranches and Alaska Airlines to get fresh hops into our brew kettle just about 15 hours after they were harvested - making for the freshest fresh hop beer we've ever brewed in our 38-year history.
