Hey there, great to see you again! Today we're cooking up some delicious Pad See ew! Its so easy and sooo delicious! The recipe is below. Enjoy! ~TWL Pad See Ew Ingredients: · 2 lb fresh wide flat rice noodles or dry flat rice noodles · 2 tbsp corn starch · 1 tbsp baking soda · 2 tsp dark soy sauce · 2 tbsp oyster sauce · 1 tbsp light soy sauce · 1 tbsp fish sauce · 2 tsp shaoxing wine · 2 tsp brown sugar · 3 tbsp canola or any other clear oil (estimated) · 2-4 cloves garlic cloves, coarsely chopped · 6-8 oz beef sliced thinly (New York or Top Sirloin is best) or chicken thighs (boneless, skinless) · 3 eggs · 4 stems Chinese broccoli (Gailan) · ½ medium onion (julienned) · 2-4 green onions 2-3 inches long or diced for garnish Directions: If using dry noodles, soak them in hot water until soft. If they are very wide, you can boil them but be careful not to overcook them or they’ll break up in the pan/wok when stir frying. They should be somewhat al dente. If you are using fresh noodles, you usually have to microwave them for about 30-60 seconds to get them warm enough to separate since they often come in folded sheets. (Choose the ones that are precut to save you some time.) Meat: In the video, I used ribeye steak and sliced it thicker than I would normally do. I also used corn starch, baking soda, soy sauce and Shaoxing wine to marinate the meat before cooking. Marinating in baking soda before cooking is good to tenderize the meat if the cut you are using is a little tougher. I did it anyway to show this additional step. For the sauce: You can mix dark soy sauce, light soy sauce, oyster sauce, fish sauce, and brown sugar in a bowl and set aside beforehand. However, in the video I added them to the pan individually. Chinese Broccoli – trim ends, cut into 2-3 inch pieces. Separate leaves from stems since you will cook the stems first. You can cut the stems at a bias or split them if they are more than ½ inch thick, to help them cook faster. In a pan/wok over high heat, add some oil and then ½ of chopped garlic when oil is hot. Cook for about 20 seconds and then add beef or chicken and cook till meat is done then remove from pan/wok and set aside. In the same pan/wok add oil and the rest of the garlic when oil is hot. Cook for about 20 seconds and then add Chinese broccoli stems and onions. Cook for about 2-3 minutes and then add broccoli leaves. Cook for 1 minute and then remove broccoli and set aside. Crack eggs in a bowl and scramble them. You can also crack them in the hot pan and scramble in the pan as well with the broccoli and onions pushed aside. However, make sure to add more oil if needed. Once eggs are done, remove and set aside. Now add more oil to the pan/wok if needed. Make sure pan/wok is hot and toss noodles in the pan. If you were soaking the noodles or boiling them, make sure you strained them well to remove excess moisture. Toss noodles or use chopsticks, spatula, or tongs to move noodles around in the pan. Do this for about a minute or so to get them warm. At this point, add the sauce or the individual sauce ingredients into the pan/wok. Make sure to disperse the sauce evenly. If you are using a wok, you can disperse the sauce around the sides of the wok. Toss the noodles or mix with utensils for about 1-2 minutes. Noodles should start taking on a brown color. Now you can add the eggs, broccoli, and meat back into the pan/wok. Continue to toss and mix for another 2-3 minutes to combine the flavors, then add the 2-3-inch-long greens onions.
