INGREDIENTS Cookie dough: 1 ½ cups (330 g) dark brown sugar ½ cup (100 g) granulated sugar 1 cup (226 g) melted butter 2 medium eggs 2 tsp vanilla extract (or 16 g vanilla sugar) 2 tbsp (30 ml) milk – any kind (whole, oat, almond…) 3 cups (360 g) all-purpose flour ¾ tsp salt (about 4 g) ¾ tsp baking soda (about 3 g) ½ tsp baking powder (about 2 g) 1 tsp cornstarch (about 4–5 g) ¼–½ tsp cinnamon (optional, to taste) 1–2 cups (200–400 g) milk chocolate chips or roughly chopped milk chocolate S’mores filling: 4 digestive biscuits, or rectangular coconut biscuits (use ½ biscuit per cookie) 8 jumbo marshmallows (I actually used about 16 medium-sized ones since that’s all I could find in my local store) 1 bar milk chocolate (Milka or any brand you like) INSTRUCTIONS Preheat oven → 350°F / 175°C (top & bottom heat). 1. Make the dough Whisk together the melted butter, dark brown sugar, and granulated sugar until smooth. Add eggs, vanilla, and milk; mix until well combined. Sift in the flour, baking powder, baking soda, salt, cornstarch, and cinnamon. Mix into a thick, sticky dough. Fold in the chocolate chips. 2. Assemble the s’mores Break or cut each biscuit in half so you use ½ per cookie. Place a piece of milk chocolate and the marshmallows on top of each half biscuit. Scoop about 40–50 g (≈2–3 tbsp) of dough, flatten it with your palms, and wrap it completely around the s’more. Make sure the filling is fully covered. 3. Bake Place the cookies on a parchment-lined baking tray, leaving enough space between them. Bake for 13 minutes at 175°C / 350°F.
