For this recipe you will need the following ingredients: 3 cups of Buttermilk 4.5 pounds of chicken breast boneless/skinless (you can increase or decrease the amount of chicken to make more or less....) 4 eggs 1.5 pounds of flour Kosher Salt: 1.5 Tablespoons Pepper: 1.5 Tablespoons Onion Powder: 1.5 Tablespoons Garlic Salt: 1.5 Tablespoons Slice your chicken in half. Slice your chicken again lengthwise then rotate to cut your cubes. Set your cubes of chicken in a bowl and pour the buttermilk over it. Mix well to ensure that all the pieces are coated then refrigerate for 3 hours to over night. When you are ready to fry your chicken whisk your eggs in a bowl and add all of your marinated chicken as well as any buttermilk remaining. Mix well and set to the side. Prepare your flour mixture. Coat your chicken with the seasoned flour mixture and set on a tray. Let it rest for 8-10 minutes before frying... Heat your oil to 350F and slowly add your chicken. Be sure not to over crowd the pot or your temp will drop too fast and you won't get a crispy exterior. Fry for 2-3 minutes and set on a wire rack to drain. These beautiful nuggets are ready to eat.. To freeze- Make sure your chicken is cooled down. Place in a vacuum sealer bag or a freezer Zip Lock Bag. To reheat simply take out of the freezer and either refry your nuggets for 1:30-2 minutes (this will give you a crispy exterior) or you can bake them for 25 minutes in a 350F oven.
