These Carnitas Tacos al Vapor are my Super Bowl twist on traditional tacos de canasta, made with crispy carnitas and a unique steaming method. Instead of soaking the tacos in chile oil, I dip the tortillas first, fill them with carnitas from Carnitas El Guero de Apatzingán, and steam them in wrapped bundles for soft, flavor-packed perfection. From crispy carnitas to soft, flavor-infused tortillas — this is my special California-Style Carnitas Tacos al Vapor recipe I made for the Super Bowl. That day, I didn’t have time to cook the carnitas from scratch. So I did what any smart taco lover would do — I went to my friend’s place, Carnitas El Guero de Apatzingán in Escondido, California, and picked up freshly made carnitas for this recipe. And they did not disappoint. This version of tacos al vapor (tacos de canasta) is slightly different from the traditional method. Instead of assembling the tacos and then bathing them in chile oil before steaming, I: • Dip the tortillas directly into my homemade guajillo chile oil sauce • Fill them with juicy carnitas • Wrap sets of three tacos in parchment paper and aluminum foil • Place those sealed packages inside the steamer As they steam: ✔️ The tortillas become soft ✔️ The chile flavor infuses evenly ✔️ The carnitas stay juicy ✔️ The texture stays tender but structured The result is a perfectly balanced carnitas taco — flavorful without being soaked in oil. 🔥 The Game-Day Upgrade For this Super Bowl version, I created a fresh topping using the chiles en vinagre from Carnitas El Guero, mixing them with: • Fresh-cut cucumber • A pinch of Santa Prisca Colima Sea Salt.
