Episode 1 of a 3-part series on fish I've always wanted to cook more fish, but I realized not many people do. So I asked myself a question: why? 🧐 I did some research, explored recipes from around the world, and found some surprising answers. Is it due to a lack of knowledge? Or is there something more? In this video, I take you on my quest and, in the end, prepare an incredible recipe for fish with coconut and corn sauce. 🍽️✨️ Grouper in Coconut and Corn Sauce Recipe: 2 grouper fillets (you can use snapper, tilapia, any white fish of your choice) 1 ear of corn 1 cup coconut milk 3 garlic cloves 1/2 medium onion 1 tsp tomato paste 1 tbsp coconut oil 1/2 tsp cumin 1/2 tsp Fennel seeds 1/2 tsp. mustard seeds 1 small piece of lemon peel 1/4 of a whole lemon Salt and pepper to taste Red chili oil (optional) Instructions: Preparing the corn and onion: Shred the corn, reserving two small portions for garnish. Blend the onion with the garlic until smooth. Cooking the fish and corn: In a pan, sauté the corn for a few minutes until lightly browned. Add the fish to the pan, season with salt and pepper, and brown lightly on both sides. Adding the onion and other ingredients: Add the blended onion and garlic mixture and sauté with the lemon peel for 5 minutes. Add the spices, tomato paste, coconut milk, and 1/3 cup of water. Cook the preparation over medium heat for 10 minutes. Adjust the seasoning, adding more salt if necessary. Plating: Serve the sauce on the plate, top with the fish, and garnish with the reserved corn pieces. Squeeze a little lemon over the mixture for a fresh touch.
