Sakura Mochi is one of my favorite mochi sweets, a sweet with a unique flavor that signals spring. In recent years, cochineal/carmine dye, which was not originally available in Japan, has been introduced to Japanese sweets, and many sakura mochi are now colored with it. (They used to be colored with tar dyes. Before tar dyes, plant dyes were used.) Not only that, many supermarket-quality mochi contain fish-derived preservatives. There are some Wagashi shops that make non colored Chomeiji, but they often contain eggs. Ever since I went vegan, I've been searching for and trying a variety of sakura mochi in shops that continue to make sakura mochi in traditional and authentic recipes with no coloring. Here are four of those shops that have been added in regulars on my shopping list. In Japan, roughly 50% of white sugar is refined with bone char, and it is almost impossible to trace back to the source, since even sugar from the same company may be processed in different ways in different factories. So as long as you eat accidentally vegan friendly processed foods in Japan, it is almost impossible to avoid it.
