For the longer drying processes for dry-cured products such as salami or dry-cure ham, a variety of air circulation systems can be used depending on the batch size. Trolley loading, with standard smoke wagons or overhead rail systems, as well as the design and size of the chamber are the determining factors. Schröter's CLIMAjet® NR Tower solution is specifically designed for racks with a height exceeding 5000 mm. This innovative design concept and air guidance system creates ideal conditions for post-maturing processes and can be operated as a two, three, or even four-row system. Exceptional drying uniformity is achieved through an ingenious alternating flap mechanism for air guidance. Air is alternately directed upwards and downwards along the outer walls, while air return occurs centrally between these points. To ensure optimal uniformity, a third alternating flap can also create diagonal airflow within the CLIMAjet® NR Tower. With this technology, Schröter offers flexible solutions for a wide range of drying applications.
