In some parts of Talisay, it remains a common practice for the slaughtering and roasting to happen in the same space, especially in long-running, family-operated setups. Our intention in showing this process is not to sensationalize or criticize, but to respectfully highlight the hard work and reality behind one of the most iconic Filipino dishes.
