Mayonnaise 101 Chilli crisp mayo: 350ml neutral Oil 3 star anise 1 cinnamon stick 2 bay leaves 2 tbsp Sichuan peppercorns 1cm knob of ginger 1 tsp cloves 3 garlic cloves, lightly crushed. —---------------- 75g chilli flakes 2 tsp salt 2 egg yolks 1 tsp dijon mustard 1 ½ tbsp ponzu (1 tbsp soy sauce & 2 tsp lime juice) 1.Add the first set of ingredients to a pot. Set to high heat until they sizzle then set to low for another 30 minutes. Strain & pour over the chilli flakes. Let it sit overnight or at least cool to room temp. 3.Add egg yolks, salt, mustard, & ponzu to a container. Whisk or blend then pour in strained chilli oil until the mayo forms. Basil mayo: 300g basil leaves 300ml neutral oil 1tsp dijon mustard 1tsp lemon juice 1 garlic cloves 2 egg yolk Salt to taste 1tsp baking soda 1.Blanch basil leaves for 10 seconds in boiling water & baking soda. Dunk in ice bath then Squeeze out water. Blend them with double their weight in water for 2-3 minutes. Strain the oil with a cloth-lined sieve into a bowl, set over ice to quickly cool. 3.Add mustard, lemon juice, egg yolks & garlic to a container. Whisk or blend then pour in basil oil until the mayo forms. Chicken fat mayo: 125ml neutral oil 125g chicken skins 3 garlic cloves 3 sprigs of thyme 2 tsp dijon mustard 2 tsp lemon juice Lemon zest from ½ lemon Black pepper & salt to taste 1.Add oil, chicken skin, garlic & thyme to a pan. Cook on medium heat until the chicken skins are golden & crisp. Strain the oil, keeping the garlic & chicken skins. 2.Once the oil has cooled, add the garlic, mustard, egg yolks, & lemon juice to a container. Whisk or blend then pour in the chicken fat until the mayo forms. Season with lemon zest, black pepper & salt. Top with crispy chicken skin. Black Garlic mayo: 300ml neutral oil 2 tbsp black garlic cloves, peeled 1 garlic clove 2 egg yolks 2 tsp balsamic vinegar 2 tsp ponzu (or 1 ½ tsp soy sauce & ½ tsp lemon juice) 2 tsp squid ink (optional for colour) 1.Add black garlic, garlic, egg yolks, balsamic, ponzu & squid ink to a container.
