Truck Camping, Fly Fishing and a Meatball Sandwich Fail

Preacher and I set up camp on the river for some fly fishing with my brother in law and father in law. Good thing we had a fishing guide along—otherwise, we'd probably have been standing around catching nothing but branches. Preacher, as always, had a blast. He's obsessed with the water and couldn't get enough of inspecting every trout we caught. Back at camp, I made meatball sandwiches, but using cheap jar sauce turned out to be a bad decision—lesson learned. Fireman's Tiny Meatballs Ingredients: ½ lb ground pork ½ lb ground beef (80/20 or fattier) ¼ cup grated Parmesan cheese ½ onion, finely chopped ¼ cup bread crumbs 4 cloves garlic, finely chopped 1 egg Olive oil (for frying) Jar of marinara sauce or homemade marinara sauce Instructions: In a large mixing bowl, combine ground pork, ground beef, Parmesan cheese, onion, bread crumbs, garlic, and egg. Mix thoroughly until evenly combined. Form the meat mixture into small meatballs, approximately 1.5 inches in diameter. Heat a skillet over medium-high heat and add a small amount of olive oil. Pan-fry meatballs, turning occasionally, until evenly browned on all sides. (Note: The meatballs will not be fully cooked through at this stage.) Once browned, pour marinara sauce over the meatballs directly into the skillet. Bring sauce to a boil, then reduce heat to low and simmer uncovered for approximately 10 minutes, or until meatballs are fully cooked.
