Creamy, rich, and packed with real vanilla flavor, this one tastes just like the real thing (without the dairy). It’s the perfect dessert for any celebration—or honestly, just because you’re craving something really good. ✨ You can also make it gluten-free by using your favorite GF graham crackers for the crust. INGREDIENTS Gluten-Free Crust (Optional) • 2 ¾ cups graham crackers • 10 tbsp melted butter • ½ tsp cinnamon Cheesecake Filling • 16 oz dairy-free cream cheese (room temp — I like Tofutti or Kite Hill) • 12 oz dairy-free sour cream (same brands work great) • 1 egg • 2 egg yolks • 1¼ cup sugar • 3 tbsp vanilla extract (the better the quality, the better the flavor) • 1½ tbsp vanilla paste INSTRUCTIONS Make the Crust 1. Add graham crackers to a blender and pulse into fine crumbs. 2. Mix crumbs with melted butter and cinnamon in a bowl until fully combined. 3. Press into a greased 9” springform pan, going up the sides. Use the bottom of a measuring cup to pack it tight. 4. Chill in the fridge while you make the filling. Make the Filling 1. Preheat oven to 325°F. 2. In a mixing bowl, beat the room temperature cream cheese for 3 minutes until smooth and fluffy. 3. Add the sugar, eggs, and vanilla paste. Mix on high for 5 minutes until light and airy. 4. Add sour cream and vanilla extract. Mix for another 3 minutes until fully combined and creamy. 5. Pour the filling into the prepared crust and smooth out the top. Bake & Finish 6. Bake for 45–60 minutes (don’t open the oven while baking!). 7. Let cool at room temp for 1 hour. 8. Chill in the fridge for 4 hours or overnight before slicing. This cheesecake is a total crowd-pleaser—dairy-free or not. Whether you’re serving it plain or dressing it up with fruit, chocolate, or a crumble topping, it’s going to disappear fast.
