As ghee melts, pour the grated carrot in ghee. Roast on medium flame, for 1 to 2 minutes while mixing. Cover and cook the carrot on low medium flame for 5 minutes. Cut the dry fruits, Take 15 to 20 cashews,cut them into 5 to 6 pieces,some in 2, take 15 to 20 Almonds, cut into 4 to 5 longer slices.Take 6 small cardamoms, make green cardamom into coarse powder. After 5 minutes, stir the carrots. Cover and cook it again on medium flame for 5 to 6 minutes. Carrot is juicy and sugar has dissolved. Carrot is cooked for 15 minutes, stirred at regular intervals. After 15 minutes, add sugar to it. Cover and cook it for 3 to 4 minutes minutes on low flame.Check halwa. Cook carrot open until its juices reduce. Increase flame. Check at regular intervals. Meanwhile crumble and add mawa till ghee separates from it. Stir and cook it on low medium flame till it changes color and is aromatic. Turn off flame, roast mawa for a while. halwa with preserve tips Carrot is cooked and ready, its juice has reduced. Add 1 cup milk to the rest of the halwa mix in the wok. Cook until it is dense. Stir at regular intervals. Halwa is cooked on high from 5 minutes.Add roasted mawa, dry fruits, add cardamom powder. Mix all ingredients, cook for 2 minutes. Take out the halwa in a platter.Garnish halwa with dry fruits.You can keep and eat this halwa for Suggestion : Use the reddish carrot for making the halwa available especially in winters. If the carrot turns out to be too soft, then the halwa doesn't taste that good. You can adjust the quantity of sugar as desired. Using milk is optional. Keep an eye to prevent halwa from browning.
