I have just started following the Slimming World plan and decided to document a day of eating in my first week of it. I hope you enjoy and thanks for watching! Breakfast (5 SYNS) : Blend one frozen banana and top with fresh strawberries and blueberries. Drizzle over your favourite Skinny Syrup for extra sweetness and enjoy! I bought my Skinny Syrup from TKMAXX. Lunch (FREE) : Chop half a tomato, 1 red chilli, a quarter of a red onion and a handful of fresh coriander. Mix together with a can of chickpeas, add the juice of half a lime and season with salt and pepper. This is great as a side dish and can be enjoyed with either pasta or cous cous. Snack (FREE) : 1 bowl of watermelon and a glass of iced apple and cinnamon tea from Tea Pigs. I got the idea of icing my tea from Emily Bouldon, @ylimesalad_slimmingworld on Instagram :) Dinner (3 SYNS, FREE if you use FryLight): Chop your potatos into fries and boil for 5 minutes, drain and shake them in pan to roughen the edges. Lay on a baking tray and spritz with Frylight, season with salt, pepper and paprika and place in the oven for 30minutes or until golden. Place chickpeas and cooked quinoa into a food processor and add dried garlic, paprika, cumin, salt and pepper then blitz. Shape into burgers and place in the oven for around 30 minutes. For a relish chop and mix tomatoes, red onion, garlic, a red chilli, jalepenos, a handful of fresh coriander and the juice of one lime. Season with salt and pepper. You can also blend these ingredients in the food processor if you want a smoother consistency. Blueberry oat muffins (1 SYN for 4 and HEXB) : Mix 35g of oats, 50ml almond milk/skimmed milk, 1 egg, 50g of fresh/frozen blueberries, 2tbps of sweetner and a few splashes of vanilla extract. Spoon into silicone cupcake cases and place in the oven at 180c for 30 minutes or until golden! x x x
