Hi guys! Welcome back to learning how to bake with Susie. Today I'm making Kolaches. Kolaches are a semi-sweet pastry originating from central Europe (Czech). It's a yeasted dough with cream cheese or fruit filling in the center. This was my first time making it and it was fairly simple to make even dough it had a lot of steps. I used the desired dough temperature of 75 F to determine what temperature milk to use. If you don't have a thermometer or don't want to use the desired dough temperature, use milk at room temperature or a little cooler. After combining the ingredients, knead until the dough is smooth and a little stretchy. The dough will be very sticky, do not add more flour. The dough is very fluffy and adding more flour will make it dense. I proofed my dough in a warm place but make sure your dough doubles in size during proofing before moving to the next step. For the fillings, I used cream cheese and berries. You can double the recipe for either filling if you just want to make one. I used a scale to divide the dough into 16 equal pieces but you can just measure by eye if you don't have a scale. You can use the bottom of a measuring cup or a glass to create the indentations. Put the fillings in the indentations, brush the edges with the egg wash and place the streusel on the edges. Be careful not to drop the streusel into the fillings, it's okay if a little drops in it. Bake for 25 mins at 350F and it can be eaten after it cools a little bit. The leftovers can be stored in a closed container and placed in the fridge for up to a week. Heat up in the oven or microwave before eating. I hope you guys have as much fun as I did making this recipe. They were very delicious, and rich and the house smelled heavenly. Enjoy!
