Characterized by a smoky flavor and sweet-savory marinade (soy sauce, calamansi, banana ketchup), common items include pork BBQ, isaw (intestines), betamax (blood), and liempo (pork belly), typically served with spicy vinegar dips. Key Components of Ihaw-Ihaw Common Proteins: Pork belly (liempo), chicken (inasal or barbecue), and various offal, including chicken feet (adidas), pig ears (tenga), and intestines (isaw). The Marinade: Typically a mixture of soy sauce, calamansi juice, brown sugar, garlic, and banana ketchup, often marinated overnight to ensure tenderness and deep flavor. Cooking Method: Grilled over hot, glowing charcoal to achieve a smoky, charred exterior. Serving: Served hot, often with a dipping sauce (sawsawan) made of vinegar, soy sauce, onions, and chili. The Mercato Centrale in Bridgetown Pasig is open every Tuesday to Sunday, from 02:00PM to 12:00AM.
