Stir-Fry the Potatoes Heat 2 tbsp oil in a pan over medium heat. Stir-fry the potato chunks until golden brown and crispy. Remove and set aside. 2. Sauté the Garlic and Chicken In the same pan, add another 2 tbsp oil if needed. Sauté all the garlic until golden brown and aromatic. Add the chicken pieces and sear until lightly browned on all sides. 3. Simmer the Adobo Pour in the soy sauce, vinegar, 2 cups of water, 4 bay leaves, and black peppercorns. Do not stir after adding vinegar—let it boil for 3-5 minutes to cook off the strong vinegar taste. 4. Add the Potatoes & Season Stir the chicken and let it simmer for 30-40 minutes or until tender. Add the stir-fried potatoes in the last 10 minutes of cooking. Add sugar (if using) and season with salt if needed. Let the sauce reduce to your preferred consistency. 5. Serve and Enjoy!
