In this video, I’m sharing my Secret 6-Spice Roasted Masala and a simple trick to remove all the bitterness. This recipe makes Karela so tasty and crispy that even kids will love it! Perfect for a healthy lunch or dinner side dish. 🛒 Ingredients (सामग्री): Karela (Bitter Gourd): Sliced (करेला) Onion: 1 Large, sliced (१ बड़ा कांदा/प्याज) Oil: 2-3 tbsp (२ से ३ चम्मच तेल) Garlic: 7-8 Cloves (७-८ लहसुन की कलियां) Lemon: Half (आधा नींबू) Turmeric Powder: 1 tsp (१ चम्मच हल्दी) Salt: To taste (स्वाद अनुसार नमक) ✨ The Secret 6-Spice Masala (खास मसाला): (Dry roast and grind these together / भूनकर पीस लें) Mustard Seeds (Rai): 1 tsp (राई) Fennel Seeds (Saunf): 1 tsp (सौंफ) Fenugreek Seeds (Methi): 1 tsp (मेथी) Cumin Seeds (Jeera): 1 tsp (जीरा) Nigella Seeds (Kalonji): 1 tsp (कलौंजी) Carom Seeds (Ajwain): 1 tsp (अजवाइन) 👩🍳 Cooking Steps (बनाने की विधि): Remove Bitterness: Squeeze the sliced Karela and soak it in water (with a pinch of salt) to draw out the bitterness. Prepare Masala: Dry roast the 6 seeds (Rai, Saunf, Methi, Jeera, Kalonji, Ajwain) until aromatic and grind them into a powder. Sauté: Heat 2-3 spoons of oil. Add the 7-8 cloves of garlic and the large sliced onion. Fry Karela: Add the squeezed Karela, turmeric, and salt. Slow Cook: Sprinkle your secret roasted masala and add half a lemon juice.
