The year was 1992 and his hometown was Hoskote, then a mere highway halt enroute to Madras. Soon Mani began preparing and serving a rustic-style mutton ‘biryani’ inspired by his amma’s recipe. His early patrons, workers from nearby factories, truckers and drivers, for whom the biryani was a satisfying early morning meal to help sustain them through the day, having relished Mani’s biryani not only carried its taste but also news on this biryani shop. Year after year, the throng of customers to Mani’s eatery grew, and this also spawned the tradition of the early morning Hoskote biryani ritual with other biryani shops opening in its wake. Today Mani Dum Biryani Hoskote caters to hundreds of customers every Tuesday, Friday, and a few thousand on Sundays, but the rustic soul of the biryani remains, be it in the setting or the flavour of the dish, prepared only by Mani’s sons with a secret spice blend made by his wife. I drove out at dawn one Tuesday to watch the sons, Manjunath, Kiran Kumar and Chandrashekar prepare the biryani that first put Hoskote on the food lovers’ map. Mutton Biryani The only dish made at Mani Dum Biryani, is unique in its aroma that is redolent of an amalgam of spices combined with meat. Each grain of the rice has absorbed the procession of spices that go into the pot and the fat that is rendered from the meat, this is the sort of biryani that leaves behind a spicy impression on the palate. You can taste the heat of green chillies, and the flavour of the secret spice mix that’s made in Mani’s home. Some of the meat is laced with fat that melts in the warmth of one’s mouth, some pieces though can have a bit of a bite. This is a spicy biryani, and the mosaru bhajji, onion and cucumber raitha helps cool things down.
