About La Fabrique Opened in 2018, La Fabrique is a colourful new addition to the buzzy pedestrianised street of Calle Fábrica, in the lively Palma neighbourhood and popular nightspot of Santa Catalina. With a choice of seating on the sunny terrace or inside, the restaurant is open six days a week, showcasing the produce and flavours of the island, though in the style of a Parisian bistro. The result is a deliciously refined though very accessible cuisine, where the ingredients take centre stage and most of the dishes are made for sharing. The writer and the chef The partnership behind the restaurant are married couple Hélène y Stéphan. A renowned journalist in France specialising in gastronomy, Hélène has created numerous inspiring recipes in her writing and interviewed some of the world’s leading chefs. Stéphan has had a thousand lives in one, starting his career in the restaurant of the three-Michelin-star chef Marc Meneau and he brings his ample experience to the restaurant’s kitchen. They left Paris in 2017 to move to the island. After organising many diners on their terrace in Ciudad Jardin, they decided to open their own restaurant – which was always a dream of the couple – and La Fabrique was born. The cuisine The ethos behind the cuisine is to use Mallorcan products sourced freshly from its wonderful markets, and revisit them in a style that reflects their Parisian root. Hélène and Stéphan create a cuisine based largely on vegetables where meat and fish play second fiddle – though their burger is still a popular favourite. It’s a menu that highlights the mostly locally sourced ingredients, while having fun with unusual associations. Highlights of the menu include Black Three Tomato Pie, Whole Roasted Cauliflower, and Sardines Rillettes, while for dessert their Lemon Tart, Crème Brûlée or Chocolate Mousse make for a wonderful end to the meal.
