Mix sugars and butter together, then add remaining wet ingredients. In a separate bowl, add all dry ingredients (except chocolate chips and nuts, if using) and whisk to ensure they're well incorporated, then slowly add to the mixed wet ingredients. Once the cookie mixture is well mixed, add in chocolate chips and nuts. Use a kitchen scale ( https://amzn.to/2o0FbdI ), cookie scoop ( https://amzn.to/3j7OmBQ ), or just eyeball it, and make 24 cookies. I roll them into a ball and place them on a cookie sheet ( https://amzn.to/2puuUqN ) lined with a silicone baking mat ( https://amzn.to/2oAelt0 ). Then flatten them slightly with the palm of your hand or the bottom of a glass (this is optional of course). They'll go in the oven for about 12 - 14 minutes, until they are done (ovens vary, so cooking time may vary).
