Dead Dad's Kitchen | Christmas Lasagna w/ Eddie Walton

Hi my littlest jingle bells!! We have a VERY special recipe this week helped along by an even more special guest - my brother, Eddie! My dad used to make this every Christmas so I wanted to give y'all the option to enjoy it as well! Please find the recipe below :) | Frank's Christmas Lasagne | Meat Sauce: 1/4 cup olive oil 1/2 head of garlic peeled and chopped fine. 3/4 medium onion chopped fine 3 tbsp. tomato paste 1lb hot Italian sausage 2lb 80/20 ground beef 2 24 oz cans crushed, peeled tomatoes Red wine 1 tbsp. dried parsley 1 tbsp. dried oregano 1 tbsp. hot red pepper Saltypep (more than you think you need) Heat your olive oil in a stockpot or large pot. Add your chopped onions and garlic. Add your tomato paste. Add your meats and brown pretty completely. Add your tomatoes and all of the other stuff. Let simmer for a fat minute. Hours really. Cheeses: 1 large tub of ricotta 1-2 eggs Salty pep Mix this one! 1 16oz package of whole milk, low moisture mozzarella Chop this one! 1 12oz. package of parm, try to find a block and grate it if you can! Sprinkle this one! Noodles: 2 16oz packages of lasagne noodles (I only used one, but you definitely don't want to be lacking if you need more.) Boil these bad boys until they're super al dente (enough so that they can stand an hour in the ov and not get too mushtown.) Assembly: I like to use disposable pans so that it can be easier to transport, gift, etc. Start by adding a thin layer of your long-simmered sauce and noodle up, son. Begin layering in the following order: Sauce on top of noodles Ricotta mixture Mozz chunks Parm Sauce Noodles Repeat until you're done with your ingredients ending on a layer of just noodles, sauce, mozz and parm! Let that set up in your fridge for about an hour or a day if you're baking it off a little later. Allow that little angel to hang out in your freezer if you're making way later. Take out of the fridge about an hour before baking, or take out of the freezer and put into the fridge about 6 hours before baking. Use this time to preheat your oven to 350 degrees. Bake at 350 covered for about 45 minutes and then at 400 uncovered for about 15 minutes. Let sit for about 10 minutes before slicing and enjoying! ______________________ Big thanks to the best big brother I could ever imagine (find him at @edd.walton) for always making me laugh, always helping me when I cry and always making sure I got home without getting murdered in the uber on the way there.
