Brown the bacon in olive oil, then sear the oxtail until golden. Add onion, celery, and garlic; cook until softened. Add the oxtail to the pot Add herbs, Worcestershire sauce, tomato paste, and chopped tomatoes. Pour in red wine, water, and beef stock. Add spices and brown onion soup powder. Simmer gently for 2–3 hours, stirring occasionally. Add baby onions, carrots, and potatoes; cook until tender.
