Today we are finally making birria tacos! These tacos have taken the internet by storm and became popular worldwide within the last year or two. However, you can’t find them everywhere. So our goal is to make them at home with equally delicious ingredients! Follow along and try these out for yourself! If you recreate this recipe, please tag me as I would love to see and feature your creation! #birriatacos #quesatacos #tacorecipe Recipe ------------------------------------------------------------------ Ingredients: o 3 lb beef shank o 5 dried guajillo chiles o 3 dried pasila chiles o 2 chipotle peppers in adobo o 1 Tbsp olive oil o 2 ½ tsp salt o 1 tsp pepper o ¼ tsp clove o ¼ tsp cinnamon o 1 sprig of thyme o 3 bay leaves o 1 Tbsp oregano o 5 cups of beef stock o 2 small white onions o 6 cloves of garlic o 12 corn tortillas o 1 ball of mozzarella cheese o 1 bunch of cilantro o 2 limes Prep: o Remove seeds and stems from dried chiles o Dice up onions o Mince garlic o Roughly chop cilantro o Slice limes into wedges o Grate cheese Cooking the Birria: o Season beef shank with salt and pepper and brown on all sides over medium heat o Remove beef and set aside o In same pot heat 1 diced onion for 1-2 minutes until soft o Add minced garlic, beef stock, salt, pepper, clove, cinnamon, thyme, bay leaves, oregano stir to combine o Gently add in browned meat and dried chiles o Cover and simmer for 1 hour o After an hour, remove the rehydrated chiles o Blend rehydrated chiles, chipotle peppers and 1 cup of braising liquid until smooth o Add blended chiles to braiser, stir, cover and simmer for 1.5 hours o Once tender, remove bones and chop beef into pieces Making the tacos: o Dip tortillas in fat from braising liquid o Add tortilla to hot skillet and cover with cheese (it’s okay if it goes beyond the tortilla it will become deliciously crispy!) o Once cheese is melted add the birria o Fold the tortilla and fry until crispy on both sides o Repeat with remaining tortillas Serve: o Top tacos and consommé with diced white onion, chopped cilantro and a squeeze of lime o Dip tacos into consommé and enjoy!
