1️⃣Ingredients: Creamy methi dahi: Cream 1 1/2 pack Thick yogurt (Dahi) 5-6 tbsp Salt (namak) 1/4 tsp or as needed Chilli flakes (Kuti lal mirch) 1 tsp Corinder powder (Dhanya powder) 1/2 tsp Cumin powder (zeera powder) 1/2 tsp Chaat masala 1 1/2 tbsp Sugar (cheni) 4-5 tbsp Bhalla mixture: Gram flour (Besan) 1 cup Salt (namak) A pinch Carom seeds (Ajwain) a pinch Red chilli powder (Laal mirch powder) 1-2 pinches Chilli flakes (Kuti lal mirch) 1/4 tsp Cumin powder (Zeera powder) 1/2 tsp Baking powder 3/4 tsp Water (pani) 1/2 cup or as required [Add gradullay] Oil as required for frying To soft them: Hot water (Garam pani) As required to soak them Prepare Creamy Methi Dahi In a bowl, take 5–6 tbsp thick yogurt (dahi). Add 1½ packs of cream and whisk together until smooth and creamy. Mix in: Salt – ¼ tsp (or to taste) Chilli flakes – 1 tsp Coriander powder – ½ tsp Cumin powder – ½ tsp Chaat masala – 1½ tbsp Sugar – 4–5 tbsp Adjust seasoning if needed. Keep this aside in the refrigerator while you prepare the bhallas. 2️⃣ Make Bhalla Mixture In a mixing bowl, combine: 1 cup gram flour (besan) A pinch of salt A pinch of carom seeds (ajwain) 1–2 pinches red chilli powder ¼ tsp chilli flakes ½ tsp cumin powder (zeera powder) ¾ tsp baking powder Gradually add ½ cup water (or as required) and whisk to form a smooth, lump-free batter. The consistency should be thick but pourable—similar to pancake batter. 3️⃣ Fry Bhallas Heat oil in a deep pan on medium heat. Using a spoon or hand, carefully drop small portions of the batter into hot oil. Fry until golden brown and cooked through. Remove bhallas and place on a paper towel to drain excess oil. 4️⃣ Soften Bhallas Boil some hot water in a vessel. Soak the fried bhallas in the hot water for 8–10 minutes until they puff up and become soft. Gently squeeze out excess water without breaking them. 5️⃣ Assemble Creamy Dahi Bhalla Place the softened bhallas on a serving plate. Pour the creamy methi dahi generously over them. Optionally, sprinkle extra chaat masala, chilli flakes, or coriander on top for garnish. ✅ Serve chilled for best taste.
