Sheekh Kebab, also spelled as Seekh Kebab or Shish Kebab, is a popular and flavorful dish in South Asian and Middle Eastern cuisine. The name "sheekh" or "seekh" refers to the skewers on which the kebabs are traditionally prepared. These kebabs are made by skewering seasoned minced or ground meat, usually lamb, beef, or a combination of both, onto long metal or wooden sticks. Here is a typical description of Sheekh Kebab: Ingredients: • Half ½ Kg Minced Meat (500 Grams) • 2 large sized onions (squeeze the water out) • 1 tea spoon - Kashmiri Red Chilly Powder (Kashmiri Lal Mirch Powder) • Half ½ tea spoon - Regular Red Chilly powder (Lal Mirch Powder) • Half ½ tea spoon – Black Pepper (Kali Mirch) • 2 - Green Chillies - Finely chppoed (Hari Mirch) • 2 tea spoon – Ginger Garlic paste (Adrak Lehsun Paste) • 1 tea spoon – Coriander powder (Dhania Powde) • 1 tea spoon – Cumin powder (Jeera Powder) • Quarter tea spoon – Garam masala powder • Half ½ tea spoon (or to taste) – Salt (Namak) • Quarter ¼ tea spoon - Black salt (Kala Namak) • Quarter ¼ tea spoon – Baking soda (Khane ka Soda) • 1 Table spoon – Kasuri methi (Dried fenugreek leaves) • 4 table spoon – Roasted Gram powder (Bhuna Chana/Putane) • 1 Table spoon – Maida (All-Purpose Flour) • 2 tea spoon – Finely chopped Coriander leaves (Dhania Patta) • 1 tea spoon – Mint (Pudina) • 2 table spoon – Oil • Some orange red food color (2 pinch) • Half lemon The mixture is then shaped onto skewers and cooked until golden brown and flavourful. The Sheekh Kababs are known for their distinct elongated shape, which is achieved by molding the minced meat mixture onto skewers before cooking. They are often served with accompaniments like mint chutney, sliced onions, and lemon wedges.
