Ingredients For filling Chana dal -3/4cup Jaggery -2block Salt- Cumin Powder-1/2tsp Cardamom Powder-2pinch Dry ginger Powder-1/2tsp Oil/ghee2tbsp Turmeric powder-1/4tsp Water-1cup Method Dry Roast chana dal for 5 minutes in medium flame . Then soak for 20 minutes .Wash well and cook along with salt ,turmeric powder and water . Cook in medium flame for 4 whistles or untill done.. After cooling down grind the dal finely. Melt Jaggery and Strain ,keep aside Heat oil or ghee in a kadai ,add all powders and saute for 1 minute. Then add ground paste along with Jaggery . Cook in medium flame till the mix become thick . Allow to cool . For The Dough Ingredients Maida -1cup Ghee-1 tsp Sugar-1/4tsp Turmeric Powder-1pinch Salt- Milk-4tbsp Water-4tbsp Method In a bowl add maida along with salt ,sugar and turmeric powder . Mix well ..Then add ghee and mix well. Now add milk and mix. Finally add water and knead to a soft dough . Brush with some oil and keep the dough closed for 1 hour . Boli Making When the chana mix is cool ,divide it into equal size balls ,keep aside . Like same way make equal size balls out of the dough . Then take one ball of dough ,make it a small disc ,take the filling ,keep inside the disc ,cover the filling and make a perect ball .. Dip in the maida and roll it to thin sheet . Heat tawa to medium hot ,place the boli and cook.Cook one side for 1 minute ,then flip it ,and cook the other side too .. If u want u can brush some oil or ghee on top .. so like this make rest of the boli ..
