For the jam tarts, I used store-bought jam and shortcrust pastry. I filled the unbaked tart shells with the jam and popped them in the oven until the pastry was golden and the jam was bubbly. They came out perfect—sweet, fruity, and with a lovely crisp crust. I made a homemade lemon curd from scratch for the lemon curd tarts. First, I baked the shortcrust pastry shells until they were golden brown. Once they cooled, I filled them with the tangy, creamy lemon curd.
