Ingredients: Roasted rice flour - 2 cups + 2 tbsp Oil - 2 tbsp Salt - as per taste Water - 3 cups Steps: Boil 3 cups water in a wide mouthed pan. Add oil and required salt. Lower the flame and add rice flour in batches. Mix well with a spatula. Add 2 tbsp of rice flour extra to the dough and turn off the fire. Transfer the contents to a clean cloth. Hold the sides of the cloth together and knead the dough. Keep it covered. Fill less than one-fourth portion of the steamer with water. Grease the idli plates with some oil. You can either press the idiyappam directly to the plates or on to a damp cloth laid on the plate. Load the dough to the idiyappam press. Press it on to the idli plate in circular motion. Steam covered for 5 minutes. Remove from the cooker. Switch off the flame and remove the plates. Let it cool down.
