Leslie’s Strawberry Pie CRUST: 1 1/2 cups all-purpose flour 1 stick butter, room temperature 3 Tablespoons powdered sugar 1 teaspoon salt Preheat oven to 350°. In a mixing bowl, stir together all ingredients. Press onto the bottom and up the sides of a greased pie plate. Line the crust with parchment paper and weight down with dry beans (or pie weights). Bake 10 minutes, remove the beans/weights and parchment paper, then bake another five minutes or just until golden brown. Cool completely. STRAWBERRY PIE FILLING 1 cup water 1 cup sugar 4 Tablespoons cornstarch 1 cup chopped strawberries 3 ounce box Strawberry Jell-O strawberries ( enough to completely fill your piecrust; about 3 pounds) Put the water, sugar, cornstarch, and the one cup of chopped strawberries in a blender. Blend until completely puréed. Pour this mixture into a large sauce pan and whisk in the strawberry Jell-O. Bring this mixture to a slow boil, constantly stirring. Once the mixture is thick and bubbly, remove from the heat and set aside to cool. While this is cooling, wash, stem, and cut up the strawberries the way you like them. We like to leave them whole. Once the glaze and crust are cooled, stir the strawberries into the strawberry glaze mixture, and then spoon it all into the baked pie shell, spooning any extra sauce over the berries.
